Cucumber Roll Ups with Greek Yogurt, made with cucumbers sliced lengthwise, topped with a mixture of Greek yogurt, lime juice, herbs & spices. Include turkey if you'd like.
Ingredients:
- cucumbers
- 1-1/2 cups low-fat Greek yogurt
- 1 tablespoon curry powder
- 1 tablespoon lime juice
- salt and pepper
- 1 tablespoons herbs, such as cilantro, if desired
- ham or turkey if desired

That seems like an awful lot of curry powder... I might reduce that a touch for our taste. I'll bet this would work beautifully with zucchini too. Sounds delicious, and a great jumping off point for other combinations.

ReplyDeleteyou should always be prepared to make a recipe your own...if you do not enjoy curry, perhaps cumin and lemon would be more to your liking, or garlic and parsley, or chili powder and lime... :)
