This chicken casserole is easy to fix and bake, making it a great meal for a busy day. Feel free to use a rotisserie chicken to make preparation even easier.

Crockpot Chicken Noodle Soup

The chicken is so tender from the crock pot, and the soup has a lot of flavor. You can also reduce the amount of broth and serve it as a chicken and noodle dish rather than soup.

  • 2 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 stalks celery, sliced
  • 2 carrots, chopped
  • salt/pepper
  • 3 cups chicken broth
  • 2 cups water
  • 1 1/2 cup uncooked egg noodles (I don't measure. I just grab a couple handfuls)
