Mini Chocolate Drizzled Peanut Butter Cheesecake

Mini Chocolate Drizzled Peanut Butter Cheesecake Cupcakes Substitute good dark chocolate ganache for the glaze here...a good Book Club meeting dessert!!

Ingredients:
Crust:
  • 16 peanut butter Oreos, crushed
Cheesecake:
  • 2 bricks (8 oz each) cream cheese, softened
  • 2/3 cup sugar
  • 1/3 cups creamy peanut butter
  • 1 tsp vanilla
  • 1 egg
  • 1 egg white
  • 1/2 cup peanut butter chips
  • 1/2 cup semi sweet chocolate chips
Chocolate Glaze:
  • 1/4 cup peanut butter chips
  • 1/2 cup semi sweet chocolate chips
  • 1/4 cup half and half
  • 1 tbsp butter
  • Chopped peanuts for garnish, if desired
Instructions

  1. Preheat oven to 325°F.
  2. Press 1 tablespoon crushed peanut butter Oreos into the bottom of 12 lined muffin cups.
  3. Place in the freezer until ready to fill.
  4. Beat together softened cream cheese and sugar until smooth.
  5. Add peanut butter, vanilla, egg, egg white and mix well.
  6. Stir in peanut butter chips and chocolate chips.
  7. Spoon about 2 tablespoons of the cheesecake mixture into each muffin cup.
  8. Bake at 325°F for 20-25 minutes until puffed and set.
  9. While cheesecake is baking, prepare chocolate glaze by microwaving peanut butter chips, semi sweet chocolate chips, half and half and butter for 45-60 seconds.
  10. Stir until chips are melted and mixture is smooth.
  11. Place in the fridge to cool until ready to use.
  12. Allow cheesecakes to cool before adding chocolate glaze. The muffin liners can be removed prior to adding chocolate glaze, if desired.
  13. Sprinkle with chopped peanuts.
  14. Place in the fridge for at least 2 hours or until ready to serve so the chocolate glaze can set.

This Chicken Tamale casserole is a quick and easy swap for more traditional tamales - but just as delicious!

Caramel Apple Cinnamon Rolls

These Caramel Apple Cinnamon Rolls are perfect for fall and for feeding a crowd!

Ingredients:
  • 1 Package Crescent Dough sheet
  • 1 Apple peeled and diced
  • 4 Ounces cream cheese, softened

  • 3 Tablespoons butter
  • 3 Tablespoons milk

  1. Preheat oven to 350 degrees F. In a small bowl, mix together diced apple, cream cheese, and cinnamon.
  2. Roll dough sheet out onto a clean surface and cut into 6 long strips.
  3. Divide apple filling between the strips and roll each one up into a roll.
  4. Place rolls upright in a muffin tin.
  5. Bake rolls for 18-20 minutes until they are golden brown.
  6. For caramel sauce, combine sugar, butter, milk, and salt in a small pot over medium heat. Cook, stirring constantly, until mixture is bubbling.
  7. Let caramel thicken for a few minutes over the heat. Then remove from heat and add in vanilla.
  8. Let caramel cool and it will continue to thicken.
  9. When rolls are done, drizzle with caramel sauce.

Zucchini Crust Pizza

Pizza lovers, here is fast, easy and healthy healthy pizza, enjoy it at dinner

Ingredients:
  • Zucchini: 1 medium, shredded
  • Pizza Sauce: 1/3 cup
  • Tomato: 1/2 diced
  • Parmesan Cheese: 3 tablespoons
  • Mozzarella Cheese Shredded: 1/3 cup
  • Bread Crumbs: 5 tablespoons
  • Egg: 1, beaten
  • Oregano: 1 teaspoon
  • Garlic Powder: 1/2 teaspoon
  • Salt and Pepper to taste
Instructions

  1. Preheat your oven to 450 degrees. Finely grate your zucchini and let it sit in a strainer with a dash of salt to release the excess water. This is what I typically do before baking with zucchini, but you can also use the microwave technique to achieve a similar result. If you would rather use a microwave you can set a cloth in a bowl, add the zucchini on top, and microwave on high for 3-5 minutes. When the zucchini has cooled, squeeze out the excess water. Either way works, just want to get the excess moisture out to create a crispier crust.
  2. While this is draining, start heating up your pizza sauce. I whipped up a quick sauce by sauteing garlic in a skillet, adding a little sauce and fresh diced tomatoes. I love a chunky pizza sauce, so add you’re a little oregano, salt, pepper, and let it simmer while we move on to making the zucchini pizza crusts.
  3. Mix the zucchini with parmesan cheese, mozzarella, bread crumbs, oregano, garlic powder, salt, pepper, and an egg. You can then decide how many mini pizzas you want to make. For this recipe, I divided the mixture into two balls and placed them on my pizza stone.
  4. Can we please just admire my pizza stone I’m finally putting to use! Literally just took it out of the box, eek!! I feel super legit now. But seriously, if you just spray a cookie sheet, this will work just fine. Press the mixture into two crusts, making sure the edges don’t get too thin. You want your crust to bake evenly.
  5. I first put these in the oven for 10-12 minutes to cook the crust a little extra. Then carefully pull your cookie sheet or pizza stone from the oven and add your fresh tomato sauce on top of each pizza crust and top with mozzarella cheese. These mini pizzas are ready to go in the oven again until the edges of your crust get crispy.
  6. The pizzas will take around 5 more minutes after you place them back in the oven to melt the cheese and brown up on the crust. Lucky for you, these are best served hot, so no waiting is involved. I sliced these little thangs up and about 5 minutes later they were gone! New recipes don’t last very long on my plate. I mean, I’m just trying to perfect some recipes for all of YOU! :)
  7. These pizzas will give you that flavor that you need with half the calories. You can still splurge on your favorite food items and stay in line with your nutrition plan. Why can’t we eat more of things that are good to taste and for the waist?

Sweet Heat Molasses Meatballs

Horrible - sweet heat molasses meatballs I really should know better than to think 1 cup of molasses would be good. This was one of the worst flavours ever. I was almost too embarrassed to admit I've made these but I'll live with that and make sure that anyone else thinking of trying them doesnt.

Ingredients:
  • 1-2 lbs of Frozen, pre-cooked Meatballs.  I really suggest using frozen for this recipe!  You could make your own meatballs however, I think the cooking time necessary for the raw beef, and the added juice and fat, would mess with the outcome and thickness of the Molasses Glaze.
  • 1 cup Molasses
  • 1/2 cup Brown Sugar
  • 1 tsp. Garlic Powder
  • 1 tsp. Chile Powder
  • 1 tsp. Ground Ginger
  • 1 pinch of Cayenne..to taste
  • 1/2 cup water
Instructions

  1. In a large pot, simmer the Water,Molasses, Brown Sugar, Cayenne, Chile Powder, Garlic Powder and Ground Ginger, just until it’s blended…
  2. Add in the Meatballs, making sure that they’re evenly coated in the sauce.  Let them simmer until they’re heated/cooked through.  They’ll take on the most beautiful, rich, deep color and flavor!  Make sure to stir them so they’re evenly coated and so the sauce thickens up without burning…
  3. Serve them warm with adorable Pretzel ‘Stick’ handles…
  4. Serve some of those sticky, sweet Molasses Meatballs up…and be generous…
  5. Pour the remaining Molasses reduction into a dish and use for extra drizzling…OHhh Yeahhh…

Homemade Naan

So there you have it. Not too bad, right? Trust me, once you make naan yourself, you'll never want to buy the stuff in the store again! Next time, I'm going to give garlic naan a try. If I'm successful, it could be dangerous!

Cinnamon Apple Fries

Cinnamon Apple Fries - could use pumpkin dip or marshmallow whip cream or salted caramel dipping sauce.

Ingredients:

  • Fresh green apples (1 apple is good to serve about 3 people)
  • 2 cups canola oil
  • 1 cup cornstarch
  • 3 tbs cinnamon
  • 1/2 sugar

  1. Wash and cut the apples into fry shapes
  2. Slowly heat the oil in a deep frying pan.
  3. In a bowl mix the cornstarch with 1 tbs cinnamon
  4. Coat the apples in cornstarch and cinnamon right away. Shake off the extra using a strainer.
  5. In a separate bowl mix the remaining 2 tbs cinnamon and 1/2 cup of sugar. Place aside.
  6. Once oil has reached 350 degrees, fry apples a few at a time.
  7. Once the fries are golden brown place on a paper towel to dry. Then sprinkle with cinnamon and sugar.
  8. Drizzle with caramel or eat plain.

Bisquick-Battered Fruit Rings

Battered Fruit Rings - a fresh alternative to pancakes... apples, pears pineapple, etc... - This looks like a really good idea. I wouldn't use the batter suggested, though. I would use a vegan homemade pancake batter.

Ingredients:
  • 12 apple, pear and/or pineapple rings (fresh or canned)*
  • 1 cup Original Bisquick® mix
  • 1 egg
  • 1/2 cup milk
Instructions

  1. Heat 10- to 12-inch skillet over medium heat.
  2. 2In large bowl, beat Bisquick mix, egg and milk with whisk until well blended.
  3. 3Dip fruit rings one at a time into batter; place in hot skillet.
  4. 4Cook until deep golden brown on each side (like pancakes). Serve fruit rings with warm maple-flavored syrup.
